...will those of us already using the dev version be able to continue without interruption, or will it try to reinstall everything?

Right now, everything's working great, except it keeps asking me to update Spout (and if I do, it resets my achievements and "saving chunks" crashes as soon as I open my inventory, but if I just keep hitting "no" to the update request, it works fine).

Yes, you'll be fine. Just don't click update and you'll have no issues.
