Where are the cows?

Okay, I'm getting a little peeved off. Cows are the only way to make leather and leather is required to make books. And there are no cows spawning in any of the worlds I create. Only SHEEP! SHEEP! I am tired of the baa-ing!

Does anyone else have these problems?

I haven't had too many issues finding cows, yes they aren't as common as sheep/pigs but a town typically nets you a stack or two of books. It is a bit silly that cows are still the only source of leather. But what can you do, throw saddles into a sawmill?

Also it seems that cows spawn a lot more frequently in swamps. I don't know if this is true, but it just seems that way to me.
