how do you use the recipe mode in NEI (NotEnoughItems)

you press "r" while hovering over the item you want to see the recipe for. Some have multiple recipes or variations so press the > or < keys on the top to see all the recipes

Warning: R will sometimes do other things, like sort your inventory for you, or launch a lava ball if you happen to have the wrong item selected. You can see how this might be bad. :)

You could just set it to "P" like I did. (Inventory > Options > Controls > Recipe)
