In EE, is there a way to clear your memory from a transmutation tablet?

Delete the file on the server that contains that players EE info. Just be careful of what you delete as it can wipe out their EE bags as well.

As for where it is located and the file name I am unsure as I am at work now with no access to my server.

There are separate files for each bag, the tablet memory, and the Mercurial Eye if the player has one. Of note, the Mercurial Eye will hold a klein star between sessions, while the tablet will not. The bags, obviously, will hold anything you put in them.
