You can see it all happening if you look at the console.
Step 1) Click the gear on the technic launcher
Step 2) Click "Show Console"
Step 3) Launch Big Dig
Step 4) Watch the console

Fun fact: It's actually loading the textures and animation data that takes the longest from what I've seen.
Hmm... I can only guess that your server hasn't loaded the mods. The recipes are loaded on your client so that is why it works. However, on the server, it can't deal with items that it doesn't know about.

(some are called filename.jar.stash - that causes this bug (GET RID OF THE .STASH))

and put them in a new folder inside your server called "lib"
I think this happens to everyone actually. It's caused by Forge wanting to download files ending in .jar that actually end in .jar.stash.
(I read this somewhere and I can't remember who wrote it.)
