Using the safari net launcher is the only option that works 100% of the time, just keep in mind you need to be far enough away from the villager so when you go to fire the launcher via right-click that you don't interact with the villager. This is the case for all other mobs that have interactions with as well (ocelots, wolves, minions, ...)

You can also shift-click the safari net on the villager and it will capture but not open its trade GUI. Also, if your fast enough, you can right click twice before its GUI opens.

Kr0nz, just tried that in 1.0.10b and shift-clicking the villager with the ball didn't work. Unless you meant with the launcher?

 

I tested it in SP on 1.0.9c before I said that, as that's how I capture them on servers that ban the launcher (dupe glitch apparently). I have no other mods installed, so not sure why it wouldn't work for you, I dont think they would remove that.

Just tested on 1.0.10b, and it does still work, perhaps you were still in creative mode.

I can confirm what Kronz is saying. Shift clicking is how I always capture a villager mainly because I can't be stuffed fetching my Launcher.
