I know I can change the version of a given modpack (in my case, ABT), which clobbers my existing installation and any client-side tweaks. Is there a way that I'm missing that would allow me to run, say, both ABT Recommended and Latest releases, for compatibility with multiple servers?

By default, no, but you could use my Bare Bones Pack to keep a different version up. Just add it then copy over one version of ABT to that folder (config, mods, etc).

BareBonesPack is a modpack that just has Forge installed. You can add other mods and such when testing out a pack, or in your case copy over all the contents of an existing pack/version.
