It would be fun if the game could start with Cloud from the day he left Nibelheim to join soldier (notice the little s) and then move on to the day he met zack, seph and carry on after the Nibelheim massacre. And hell, why only Cloud? Perhaps play the other characters lives aswell: Barret and his mining town Red XII, his duty as protector of cosmo canyon til the day he got captured by shinra Yuffie, how much was she involved in the war in Wutai? Vincent, his work assignment in Nibelheim. Was he a simple babysitter? They could release FF7-1, FF7-2 and so forth... let the fans play the FF7 universe a bit longer

A boat factory? I know it sounds silly, but im a sucker for nice, long boat rides. I sometimes spend ridiculously overtime with underground/above ground aqueducts where i can cruise with my boat. I would love to just push a button and "plop" a boat comes out from my factory pipe, no maintenance ever needed. Might be a nooby idea, I dunno how high and grandiose inspiration your looking for here.
