Lava does not deploy directly into tanks. Have the deployer place it in to a "pool" and have a pump above it pumping it into buildcraft waterproof pipes that run into the tops of the tanks.

Twelfth, you could just use creative mode in the NEI interface to give yourself items instead of the side bar. Thirteenth, you can also change the time if day or weather. That sometimes happens during the updates. Roll back the launcher and your worlds should be fine as long as you didn't save.
